Slow Cooker Chicken Tortilla Soup

Price Chopper has boneless, skinless chicken thighs on sale right now along with black beans and frozen vegetables. You may not know it, but those three ingredients are key items to my recipe for Slow Cooker Chicken Tortilla Soup.

Ingredients:
  • 4 boneless, skinless chicken thighes
  • 1 can chopped mild green chilies, drained
  • 2 cloves of garlic, minced
  • 1 yellow onion, diced
  • 2 cans diced tomatoes, undrained
  • 1 box frozen whole kernel corn
  • 1 can black beans
  • 1/2 cup - 1 cup chicken broth
  • 1/2 packet taco seasoning
  • 2 tablespoons chopped fresh cilantro
  • 1/2 cup shredded Monterey jack cheese
  • juice of 1 lime
  • crushed tortilla chips for topping

Instructions
  1. Place the chicken in the slow cooker
  2. Combine chilies, garlic, onion, tomatoes, corn, black beans, 1/2 cup - 1 cup broth and taco seasoning in small bowl. Pour mixture over the chicken
  3. Cover, cook on Low for 6 hours or on High for 3 hours until the chicken is tender. Remove the chicken. Using 2 forks, shred the meat and return it to the slow cooker. Adjust seasonings, adding additional broth if necessary
  4. Just before serving, add cilantro to the slow cooker
  5. Serve in soup bowls, topping each serving with cheese, crushed tortilla chips and a squeeze of lime juice

Hi! I'm making this recipe today but now as I read it I'm a little confused. I don't see when you add the black beans or frozen corn. Help! Thanks, Sandy

Ack! Thank you so much for letting me know that I left them out. It is so funny because when I make the recipe they are all right there and I just dump it all in. When I am writing it out I have the tendency to forget everything that needs to go into the slow cooker at one time.

Thank you! I wasn't sure so I put them in later. I was worried the corn would get mushy. Anyway my house smells fabulous and I'm excited to try this meal for dinner. I'm in desperate need of new crock pot meals now that Fall is upon us. Thank you! Love your site BTW.

Doesn't this recipe just make your house smell yummy! I love it! Please let me know how you make out with the recipe as I always love to hear feedback. And I will be posting at least 2 more slow cooker recipes this week, one is a dessert recipe, so be on the look out for those!

I am so very glad that you loved this recipe! I have a slow cooker ham & potato soup recipe I am going to post later tonight. I had a left over ham from our Sunday night dinner and I decided to experiment! :-)
